Pairing Wines with Rich Cake

Rich cake is dense, fruited and lightly spiced. You do not need a long tasting note to serve it well - a small glass of something fortified, or a pot of spiced tea, is enough to lift the slice.
What works in the glass
Port, Madeira and similar fortified wines stand up to the dried fruit and butter. If you prefer not to serve alcohol, a cinnamon or cardamom tea does the same job: warm, a little sweet, and not too tannic.
Keep the serving small
Because the cake is rich, guests usually take a small piece. That is true at a wedding, a Christmas table or a quiet evening at home. Pair the slice, not a large wedge.
